About Kings County<\/h2>\n

Situated along the banks of the East River, Kings County Distillery is New York City’s oldest operating whiskey distillery and the first distillery in New York City since Prohibition. Wedged between Williamsburg and Vinegar Hill, Colin Spoelman and David Haskell, the master distillers at Kings County, make hand-crafted bourbon and moonshine out of the century-old Paymaster Building at the Brooklyn Navy Yard.<\/p>\n

A typewriter the two distillers found on the sidewalk in Williamsburg is used to make the labels that adorn their clear, flask-like bottles, while a hairdryer (made by Revlon) is used to affix each bottle seal. Handwritten scrawls on a chalkboard keep track of different batches, and mesh laundry bags are used as strainers. Haskell and Spoelman use the first alcohol produced from each batch \u2014 the “head” \u2014 as a disinfectant and sell the used mash to a pig farmer who uses it as feed. “I still don’t understand why it doesn’t make the pigs drunk,” Haskell says. <\/p>\n

There are two main representatives of the American whiskey family, bourbon, and rye< \/a>, but some other spirits don’t fall into those two strictly regulated categories.<\/p>\n

There’s equally strictly regulated American single malt, made from 100% malted barley, Tennessee whiskey, essentially bourbon filtered through maple charcoal and aged in new charred oak barrels.<\/p>\n

And then there’s moonshine, a high proof (150- 170 proof) distilled spirit mainly made out of corn which gained popularity during the prohibition.<\/p>\n

Moonshine:
\nThe moonshine has an aroma of sweet corn that is balanced by notes of pepper and warm vanilla on the tongue. The chocolate whiskey has an aroma of deep, rich chocolate. Initial flavors of moonshine quickly fade and are complemented by notes of bitter chocolate and a sweet finish.<\/p>\n

Straight Bourbon:
\nA rich aroma of fresh corn, balanced with the sweet caramelized oak sap from small barrels. It has a very strong sweet base with flavors of vanilla and caramel, a deep molasses taste to the middle notes, and leaves a smooth finish with hints of cinnamon and autumn spices.<\/p>\n

Peated Bourbon:
\nKings County Distiller Peated Bourbon is a scotch-like bourbon, flavorful and robust from having aged in a new barrel, with an added light smoky finish reminiscent of single-malt. If scotch and bourbon had a baby, this is what it would taste like.<\/p>\n

Chocolate Whiskey:
\nKings County Distillery Chocolate Whiskey is bitter and surprising. This rich whiskey tastes like dark chocolate and works well in cocktails or on its own as a digestif or dessert whiskey.<\/p>\n
